Coach Slo- Stephanie Lopez is a Coach at The Sweat Shop Dallas, an avid runner & Mom.

Recently we sat down with Coach Slo and asked about a recent decision to change her diet.

Since mid-2020 she decided on a diet based majorly on Fruits and Veggies. She tells us about the changes to her nutrition and life since making these changes.

Here’s what she shared with us.

1.) Coach SLO how long have you been maintaining a majority fruits and veggie diet?

Since July 2020

2.) Since changing your diet to mainly Fruits & Veggies what changes have you noticed in your life? 

I’m the healthiest I’ve ever been. Physically I have lost weight and have kept it off. My skin is much clearer and I feel stronger/faster in my runs. I have learned which food works for my body and what doesn’t. I’ve found that I crave food that I never liked before and I learned that I don’t like to eat red meat as much I used to eat it. 
3.) Share three (3) shopping tips for someone struggling to eat more fruits and vegetables daily? 

Colors make food much more enjoyable to cook and eat, the more the better.
Remember you need twice as many veggies as fruits.
I like to shop at least 2 times a week to be sure and get the freshest fruit and veggies.
4.) We want to know, what is your go-to snack? 

Hmm, Apples and peanut butter or banana with peanut butter. 
5.) Got a hack to sticking to your diet?

I found that for me, I need accountability. So I decided to hire a nutrition coach @evolutionfitnessandhealth (Eugene Mendez) and my trick is to post a daily picture on my social media platforms.
It’s a way I hold myself accountable.

6.) What’s your favorite healthy treat on weekends? 

Veggies and fruits stay in play so if I treat myself to anything it will be cake or ice cream.
Don’t deprive yourself of enjoying things. This doesn’t mean you eat cake every weekend, but at random if I treat myself it would be with one of the two 🙂
